- 500g chicken thighs, boneless and skinless
- 2 tablespoons soy sauce
- 1 tablespoon sake
- 1 tablespoon mirin
- 1 teaspoon grated ginger
- 1 teaspoon grated garlic
- 1 cup potato starch or cornstarch
- Oil for frying
Instructions
- Cut the chicken thighs into bite-sized pieces.
- In a bowl, mix soy sauce, sake, mirin, ginger, and garlic to create the marinade.
- Add the chicken pieces to the marinade and let it sit for at least 30 minutes.
- Heat oil in a deep pan to 170°C (340°F).
- Coat the marinated chicken pieces in potato starch or cornstarch.
- Fry the chicken in batches until golden brown and crispy, about 5-7 minutes.
- Remove the chicken and drain on paper towels.
- Serve hot with lemon wedges and dipping sauce.

- For extra flavor, marinate the chicken overnight.
- Adjust the frying time based on the size of the chicken pieces.
