Ingredients

  • 2 large chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 2 medium avocados
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drizzle olive oil over the chicken breasts and rub it in.
  3. Sprinkle garlic powder, onion powder, paprika, ground cumin, salt, and black pepper over the chicken.
  4. Place the chicken on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  6. While the chicken bakes, scoop and mash the avocados in a bowl.
  7. Stir in lime juice to prevent browning.
  8. Mix ranch dressing and sour cream together in another bowl.
  9. Remove the chicken, let it rest, then shred it with forks.
  10. Warm the tortillas in the microwave or on a skillet.
  11. Spread the ranch-sour cream mixture on each tortilla.
  12. Add shredded chicken, mashed avocado, shredded cheeses, lettuce, tomatoes, and cilantro.
  13. Fold in the sides and roll tightly to form burritos.
  14. Optional: Crisp the burrito seam-side down on a skillet for a minute.
  15. Serve warm, optionally with extra ranch dressing on the side.

Notes

Customize with jalapeños for heat or substitute chicken with black beans for a vegetarian option.
