Delicious and creamy lasagna rolls filled with spinach and ricotta cheese, topped with marinara sauce and melted cheese.

- 9 lasagna noodles
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 cups marinara sauce
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a bowl, mix together spinach, ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Take a lasagna noodle, spread a portion of the spinach and ricotta mixture on it, and roll it up. Place it seam-side down in the baking dish.
- Repeat with the remaining noodles and filling.
- Pour the remaining marinara sauce over the rolled lasagna and sprinkle with the remaining mozzarella cheese.
- Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a vegetarian option, ensure the marinara sauce is meat-free.
- Feel free to add other vegetables like mushrooms or zucchini to the filling.
- These rolls can be made ahead of time and stored in the refrigerator before baking.
