Description

A heartwarming Cheesy Southern Squash Casserole made with tender yellow squash, sweet onions, and a delicious cheese blend, topped with a crunchy buttery cracker crust.

Ingredients

Scale
  • 4 cups yellow squash, sliced
  • 1 onion, chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup sour cream
  • 1 cup crushed buttery crackers
  • 1/4 cup butter, melted
  • Salt and pepper to taste
  • 1 egg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the vegetables: In a large skillet, combine sliced yellow squash and chopped onion over medium heat. Cook until tender, about 5-7 minutes.
  3. Mix the sautéed squash and onion with shredded cheese, sour cream, salt, pepper, and the egg (if using) in a mixing bowl.
  4. Pour the cheesy mixture into a greased baking dish, spreading it evenly.
  5. Mix crushed buttery crackers with melted butter and sprinkle over the casserole.
  6. Bake for 30-35 minutes, until the top is golden brown and bubbly.
  7. Let cool slightly before serving warm.

Notes

Prepare the casserole a day ahead, refrigerate overnight, and bake fresh when ready to serve. Customize by adding zucchini, bell peppers, or spices.
