- 4 cups yellow squash, sliced
- 1 onion, chopped
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup sour cream
- 1 cup crushed buttery crackers
- 1/4 cup butter, melted
- Salt and pepper to taste
- 1 egg (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the vegetables: In a large skillet, combine sliced yellow squash and chopped onion over medium heat. Cook until tender, about 5-7 minutes.
- Mix the sautéed squash and onion with shredded cheese, sour cream, salt, pepper, and the egg (if using) in a mixing bowl.
- Pour the cheesy mixture into a greased baking dish, spreading it evenly.
- Mix crushed buttery crackers with melted butter and sprinkle over the casserole.
- Bake for 30-35 minutes, until the top is golden brown and bubbly.
- Let cool slightly before serving warm.
Notes
Prepare the casserole a day ahead, refrigerate overnight, and bake fresh when ready to serve. Customize by adding zucchini, bell peppers, or spices.
