Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup tahini
  • 1 tablespoon turmeric powder
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper.
  3. Spread the cauliflower on a baking sheet in a single layer.
  4. Roast in the oven for 25-30 minutes, or until charred and tender.
  5. While the cauliflower is roasting, prepare the turmeric tahini sauce by whisking together tahini, turmeric, lemon juice, water, and minced garlic in a bowl until smooth.
  6. Once the cauliflower is done, remove it from the oven and drizzle the turmeric tahini sauce over the top.
  7. Serve warm and enjoy!

Notes

  • For extra flavor, add a pinch of cayenne pepper to the tahini sauce.
