A delicious and healthy dish featuring charred cauliflower drizzled with a flavorful turmeric tahini sauce.
Ingredients

- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup tahini
- 1 tablespoon turmeric powder
- 2 tablespoons lemon juice
- 2 tablespoons water
- 1 clove garlic, minced
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper.
- Spread the cauliflower on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until charred and tender.
- While the cauliflower is roasting, prepare the turmeric tahini sauce by whisking together tahini, turmeric, lemon juice, water, and minced garlic in a bowl until smooth.
- Once the cauliflower is done, remove it from the oven and drizzle the turmeric tahini sauce over the top.
- Serve warm and enjoy!
Notes
- For extra flavor, add a pinch of cayenne pepper to the tahini sauce.
- This dish can be served as a side or a main course.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
