  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups diced apples
  • 1 cup caramel sauce
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup rolled oats
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a greased baking dish.
  3. In another bowl, beat cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Fold in diced apples and half of the caramel sauce.
  6. Pour the cheesecake mixture over the crust in the baking dish.
  7. In a separate bowl, combine flour, brown sugar, cinnamon, oats, and nuts to make the streusel topping.
  8. Sprinkle the streusel mixture over the cheesecake layer.
  9. Bake for 40-45 minutes or until the center is set.
  10. Let cool, then drizzle with remaining caramel sauce before serving.
