California Roll Sushi Bowls are a delightful and easy-to-make dish that combines the flavors of traditional sushi in a convenient bowl format.
Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 avocado, sliced
- 1 cucumber, julienned
- 1/2 pound imitation crab meat, shredded
- 2 sheets nori, cut into strips
- Soy sauce, for serving
- Wasabi and pickled ginger, for garnish
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer’s instructions.
- In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until dissolved. Remove from heat.
- Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool.
- In serving bowls, layer the sushi rice, avocado, cucumber, and imitation crab meat.
- Top with nori strips and serve with soy sauce, wasabi, and pickled ginger.
Notes
- Feel free to customize the toppings based on your preferences.
- For a spicy kick, add sriracha or spicy mayo.
- This dish can be made ahead of time; just keep the ingredients separate until ready to serve.
