Ingredients

  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1/2 pound imitation crab meat, shredded
  • 2 sheets nori, cut into strips
  • Soy sauce, for serving
  • Wasabi and pickled ginger, for garnish

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  3. In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until dissolved. Remove from heat.
  4. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool.
  5. In serving bowls, layer the sushi rice, avocado, cucumber, and imitation crab meat.
  6. Top with nori strips and serve with soy sauce, wasabi, and pickled ginger.
