- 1 lb chicken breast, diced
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup chicken broth
- 1 tbsp Cajun seasoning
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the penne pasta according to package instructions until al dente, then drain.
- In a large skillet, sauté the diced chicken until cooked through, then add the bell peppers, onions, and garlic, cooking until softened.
- Stir in the cream cheese, chicken broth, and Cajun seasoning until well combined.
- Add the cooked pasta to the skillet and mix until evenly coated.
- Transfer the mixture to a baking dish and top with shredded cheddar cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
