Instructions
- In a large bowl, combine rolled oats, almond butter, honey or maple syrup, cacao nibs, shredded coconut, chia seeds, and vanilla extract.
- Mix well until all ingredients are thoroughly combined.
- Using your hands, form the mixture into small bite-sized balls.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
