- 2 cups water
- 1 cup corn (fresh or frozen)
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Boil the water in a heavy-bottomed pot with a pinch of salt.
- Add the rice and stir briefly; cover and reduce heat to low, simmering for about 18 minutes.
- Sauté the corn in a separate pan with melted butter over medium heat until golden.
- Combine the cooked rice with the sautéed corn and melted butter, seasoning with salt and pepper.
- Serve warm, garnished with chopped parsley if desired.
Notes
For make-ahead tips, store cooked rice in the refrigerator to reheat later. Adjust seasonings to taste before serving.
