Ingredients

  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup spinach
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, and spinach.
  6. Add the cooled quinoa to the vegetable mixture.
  7. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  8. Toss gently to combine.
  9. Top with sliced avocado before serving.
