- 4 large eggs
- 1 cup shredded cheddar cheese
- 1 cup frozen hash browns
- 10 egg roll wrappers
- Oil for frying

Instructions
- Cook the sausage: Heat a skillet over medium-high heat. Add the sausage and cook until browned, about 5–7 minutes.
- Scramble the eggs: In the same skillet, reduce the heat to medium, whisk the eggs, and pour them in. Scramble until cooked, about 3–4 minutes.
- Mix the filling: In a bowl, combine sausage, eggs, cheese, hash browns, salt, and pepper until well mixed.
- Assemble the egg rolls: Place a wrapper on a clean surface, add filling, fold corners, and roll tightly. Seal with water.
- Fry the egg rolls: Heat oil in a deep pan over medium heat. Fry egg rolls until crispy and golden brown, about 3-4 minutes per side.
- Drain and serve: Remove from oil and drain on paper towels. Serve warm with dipping sauces.
