Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine diced peaches, granulated sugar, bourbon, cornstarch, vanilla extract, and cinnamon. Mix well.
  3. Roll out the pie crusts and cut them into circles.
  4. Place a spoonful of the peach mixture in the center of each circle.
  5. Fold the crust over to create a half-moon shape and seal the edges with a fork.
  6. Brush the tops with beaten egg.
  7. Bake for 20-25 minutes or until golden brown.
