Ingredients

  • 1/2 teaspoon baking powder

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes, then let cool on a wire rack.
  8. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  9. Once the cookies are cool, pipe or spread the whipped cream filling onto half of the cookies and top with the remaining cookies.
  10. Melt the chocolate chips and drizzle over the assembled cookies.
