Description

Ingredients

  • 2 cups fresh blueberries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 tablespoon butter, cut into small pieces
  • 1 package refrigerated pie crusts (2 crusts)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine blueberries, sugar, cornstarch, salt, and lemon juice. Mix well.
  3. Roll out one pie crust and place it in a large baking sheet.
  4. Pour the blueberry mixture into the crust and dot with butter.
  5. Roll out the second pie crust and place it over the filling. Seal the edges and cut slits in the top crust for steam to escape.
  6. Brush the top crust with beaten egg.
  7. Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbly.
  8. Let it cool before serving.

Notes

  • Serve with whipped cream or vanilla ice cream for added flavor.
  • Can be made with frozen blueberries if fresh are not available.
  • Store leftovers in the refrigerator for up to 3 days.
