A delicious and easy-to-make blueberry slab pie that serves a crowd, perfect for summer gatherings.
Ingredients

- 2 cups fresh blueberries
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1 tablespoon butter, cut into small pieces
- 1 package refrigerated pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine blueberries, sugar, cornstarch, salt, and lemon juice. Mix well.
- Roll out one pie crust and place it in a large baking sheet.
- Pour the blueberry mixture into the crust and dot with butter.
- Roll out the second pie crust and place it over the filling. Seal the edges and cut slits in the top crust for steam to escape.
- Brush the top crust with beaten egg.
- Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbly.
- Let it cool before serving.
Notes
- Serve with whipped cream or vanilla ice cream for added flavor.
- Can be made with frozen blueberries if fresh are not available.
- Store leftovers in the refrigerator for up to 3 days.
