Instructions
- Preheat your oven to 350°F (175°C). Prepare your baking sheet by lining it with parchment paper.
- Cream the butter and sugar in a large bowl until fluffy and light, about 3-5 minutes.
- Incorporate the vanilla and almond extracts into the creamed mixture, blending well.
- Combine the flour, finely chopped almonds, and salt with the wet mixture, stirring until just combined.
- Shape the cookies by flattening a tablespoon of dough, placing blueberry preserves in the center, and rolling it into a ball.
- Place the cookies on the baking sheet about one inch apart.
- Bake for about 12-15 minutes until the edges are golden and the centers remain soft. Cool on the sheet for 5 minutes before dusting with powdered sugar.
- Transfer to a wire rack to cool completely, dusting with more powdered sugar before serving.
