Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your baking sheet by lining it with parchment paper.
  2. Cream the butter and sugar in a large bowl until fluffy and light, about 3-5 minutes.
  3. Incorporate the vanilla and almond extracts into the creamed mixture, blending well.
  4. Combine the flour, finely chopped almonds, and salt with the wet mixture, stirring until just combined.
  5. Shape the cookies by flattening a tablespoon of dough, placing blueberry preserves in the center, and rolling it into a ball.
  6. Place the cookies on the baking sheet about one inch apart.
  7. Bake for about 12-15 minutes until the edges are golden and the centers remain soft. Cool on the sheet for 5 minutes before dusting with powdered sugar.
  8. Transfer to a wire rack to cool completely, dusting with more powdered sugar before serving.
