  • 1 cup sourdough starter
  • 1/2 cup warm water
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup blueberries (fresh or frozen)
  • 4 ounces cream cheese, softened
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash, optional)

Instructions

  1. Mix the dough: In a large mixing bowl, combine your bubbly sourdough starter, warm water, and sugar. Stir to dissolve. Gradually add in the flour and salt, mixing until a shaggy dough forms. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
  2. Place the kneaded dough into a greased bowl and cover it with a clean kitchen towel or plastic wrap. Set it in a warm spot to rise until it doubles in size—approximately 240 minutes depending on the temperature.
  3. Gently deflate the risen dough by pressing it down. Slowly fold in the blueberries, being careful not to burst them.
  4. Mix the softened cream cheese and lemon juice in a separate bowl until smooth.
  5. Punch down the dough once more and roll it out into a large rectangle on a floured surface. Spread the cream cheese mixture evenly over the dough and roll it up tightly, forming a log shape.
  6. Shape this log into a loaf and place it in a greased loaf pan. Cover and allow it to rise once again until doubled in size—this typically takes about 60 to 120 minutes.
  7. Preheat your oven to 350°F (175°C). If you enjoy a shiny crust, brush the top of the loaf with a beaten egg wash at this point.
  8. Bake the loaf for 35-40 minutes, or until the top is beautifully golden brown and the loaf sounds hollow when tapped.
  9. Allow the loaf to cool in the pan for 10 minutes, then transfer it onto a wire rack to cool completely before slicing.

Notes

For best results, use an active sourdough starter. Customize by adding spices or using different berries.
