Ingredients

- 1 cup whole milk
- 1 ½ cups heavy whipping cream
- ½ cup sugar
- 3 teaspoons vanilla pudding mix
- 1 teaspoon vanilla extract
- 1 teaspoon raspberry extract or 1 cup raspberries
- 1 teaspoon lemon extract
- ¼ teaspoon salt
- ½ teaspoon blue food coloring
Instructions
- Heat 1 cup of whole milk in a medium saucepan over low-medium heat until it reaches a gentle simmer.
- Whisk in ½ cup of sugar and ¼ teaspoon of salt until fully dissolved.
- Remove from heat and incorporate 1 ½ cups of heavy whipping cream, 1 teaspoon of vanilla extract, 3 teaspoons of vanilla pudding mix, 1 teaspoon of raspberry extract (or fresh raspberries), and 1 teaspoon of lemon extract. Mix thoroughly.
- Add ½ teaspoon of blue food coloring until you reach your desired hue.
- Transfer the mixture into the refrigerator to chill completely for at least 1-2 hours.
- Pour the chilled mixture into your ice cream maker and churn according to manufacturer’s instructions (about 20-30 minutes).
- For a firmer texture, freeze the churned ice cream in a lidded container for an additional 2-4 hours before serving.
- Scoop, serve, and enjoy!
