Description

A nostalgic, creamy ice cream with sweet vanilla and tangy raspberry flavors, perfect for warm summer days.


Ingredients

Scale
  • 1 cup whole milk
  • 1 ½ cups heavy whipping cream
  • ½ cup sugar
  • 3 teaspoons vanilla pudding mix
  • 1 teaspoon vanilla extract
  • 1 teaspoon raspberry extract or 1 cup raspberries
  • 1 teaspoon lemon extract
  • ¼ teaspoon salt
  • ½ teaspoon blue food coloring

Instructions

  1. Heat 1 cup of whole milk in a medium saucepan over low-medium heat until it reaches a gentle simmer.
  2. Whisk in ½ cup of sugar and ¼ teaspoon of salt until fully dissolved.
  3. Remove from heat and incorporate 1 ½ cups of heavy whipping cream, 1 teaspoon of vanilla extract, 3 teaspoons of vanilla pudding mix, 1 teaspoon of raspberry extract (or fresh raspberries), and 1 teaspoon of lemon extract. Mix thoroughly.
  4. Add ½ teaspoon of blue food coloring until you reach your desired hue.
  5. Transfer the mixture into the refrigerator to chill completely for at least 1-2 hours.
  6. Pour the chilled mixture into your ice cream maker and churn according to manufacturer’s instructions (about 20-30 minutes).
  7. For a firmer texture, freeze the churned ice cream in a lidded container for an additional 2-4 hours before serving.
  8. Scoop, serve, and enjoy!

Notes

Chill your ingredients beforehand for a smoother base. Use an ice cream maker for best results.
