Ingredients

  • 1 can black beans, rinsed and drained
  • 1/2 cup cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, blend the black beans until smooth.
  3. Add cocoa powder, honey or maple syrup, melted coconut oil, eggs, vanilla extract, baking powder, and salt to the food processor and blend until well combined.
  4. Stir in chocolate chips if using.
  5. Pour the batter into a greased mini muffin tin.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
