Description

Ingredients

  • 2 lbs beef chuck roast or lamb
  • 4 cups beef broth
  • 1 onion, quartered
  • 4 garlic cloves
  • 23 dried guajillo and ancho peppers
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Ramen noodles (fresh or dried)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)
  • Chopped green onions (for garnish)

Instructions

  1. Combine the beef or lamb with the beef broth, quartered onion, garlic cloves, and dried peppers in a large pot. Bring to a rolling boil and then decrease the heat to a gentle simmer.
  2. Cook on low heat for several hours until the meat is tender and shreds easily.
  3. Strain the broth using a colander, separating the solids from the liquid.
  4. Return the strained broth to the pot, adding cumin and oregano. Season with salt and pepper to taste.
  5. Cook the ramen noodles according to package instructions.
  6. In serving bowls, place a generous handful of cooked ramen noodles and top with shredded meat.
  7. Ladle the hot broth over the noodles and meat, then garnish with cilantro, green onions, and a squeeze of lime juice. Serve immediately.

Notes

Make the broth a day in advance for deeper flavor. Experiment with toppings like radishes or avocado for added twist.
