- 2 lbs beef chuck roast or lamb
- 4 cups beef broth
- 1 onion, quartered
- 4 garlic cloves
- 2–3 dried guajillo and ancho peppers
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Ramen noodles (fresh or dried)
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
- Chopped green onions (for garnish)
Instructions
- Combine the beef or lamb with the beef broth, quartered onion, garlic cloves, and dried peppers in a large pot. Bring to a rolling boil and then decrease the heat to a gentle simmer.
- Cook on low heat for several hours until the meat is tender and shreds easily.
- Strain the broth using a colander, separating the solids from the liquid.
- Return the strained broth to the pot, adding cumin and oregano. Season with salt and pepper to taste.
- Cook the ramen noodles according to package instructions.
- In serving bowls, place a generous handful of cooked ramen noodles and top with shredded meat.
- Ladle the hot broth over the noodles and meat, then garnish with cilantro, green onions, and a squeeze of lime juice. Serve immediately.
Notes
Make the broth a day in advance for deeper flavor. Experiment with toppings like radishes or avocado for added twist.
