  • 1 can (28 oz) diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the paprika, oregano, salt, and pepper.
  5. Add the diced tomatoes, beef broth, and tomato paste. Bring to a boil.
  6. Reduce heat, cover, and simmer for 1.5 hours.
  7. Add the carrots and potatoes, and cook for an additional 30 minutes or until vegetables are tender.
  8. Adjust seasoning if necessary and serve hot.

  • For a thicker sauce, let it simmer uncovered for the last 15 minutes.
