- 2 lbs beef chuck, cut into cubes
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) diced tomatoes
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup carrots, sliced
- 1 cup potatoes, diced
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the beef cubes and brown on all sides.
- Stir in the paprika, oregano, salt, and pepper.
- Add the diced tomatoes, beef broth, and tomato paste. Bring to a boil.
- Reduce heat, cover, and simmer for 1.5 hours.
- Add the carrots and potatoes, and cook for an additional 30 minutes or until vegetables are tender.
- Adjust seasoning if necessary and serve hot.
Notes
- For a thicker sauce, let it simmer uncovered for the last 15 minutes.
- Serve with crusty bread for a complete meal.
- This dish can be made ahead and reheated for better flavor.
