BBQ Pulled Pork Empanadas are a delicious twist on traditional empanadas, filled with tender pulled pork and tangy BBQ sauce, perfect for any gathering.

- 2 cups pulled pork
- 1 cup BBQ sauce
- 1 package empanada dough (10–12 discs)
- 1 cup shredded cheese (cheddar or your choice)
- 1 egg (for egg wash)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the pulled pork with BBQ sauce until well combined.
- Take an empanada disc and place a spoonful of the pulled pork mixture in the center.
- Add a sprinkle of cheese on top of the pork.
- Fold the disc over to create a half-moon shape and press the edges to seal.
- Brush the tops with beaten egg for a golden finish.
- Place the empanadas on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- Feel free to add additional spices or ingredients to the pulled pork mixture for extra flavor.
- These empanadas can be made ahead of time and frozen before baking.
- Serve with extra BBQ sauce for dipping.
