A delicious and flavorful Banh Mi Chicken Sandwich that combines marinated chicken with fresh vegetables and a spicy sauce, all served in a crispy baguette.

- 1 baguette
- 2 chicken breasts, boneless and skinless
- 1/4 cup soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1 tablespoon vegetable oil
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1 daikon radish, julienned
- Fresh cilantro leaves
- Jalapeño slices (optional)
- Mayonnaise
Instructions
- In a bowl, mix soy sauce, fish sauce, sugar, and vegetable oil to create a marinade.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Grill or pan-fry the marinated chicken until fully cooked, about 6-7 minutes per side.
- While the chicken is cooking, prepare the vegetables: slice the cucumber, julienne the carrot and daikon radish.
- Once the chicken is cooked, let it rest for a few minutes before slicing it thinly.
- Slice the baguette in half and spread mayonnaise on both sides.
- Layer the sliced chicken, cucumber, carrot, daikon, cilantro, and jalapeño on the baguette.
- Close the sandwich and serve immediately.
Notes
- For extra flavor, add pickled vegetables.
- Adjust the spiciness by adding more or fewer jalapeños.
- This sandwich can be made with grilled or roasted chicken.
