Ingredients

- 2 medium zucchinis, grated
- 1 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 large eggs
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon Italian seasoning
- Olive oil spray
Instructions
- Preheat the oven to 400°F (200°C).
- Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
- In a large bowl, combine the grated zucchini, Parmesan cheese, breadcrumbs, eggs, garlic, salt, pepper, and Italian seasoning.
- Mix until well combined.
- Form the mixture into small patties and place them on a baking sheet lined with parchment paper.
- Spray the tops of the fritters with olive oil spray.
- Bake for 20-25 minutes, flipping halfway through, until golden brown.
- Serve warm and enjoy!
Notes
- For a gluten-free version, use gluten-free breadcrumbs.
- These fritters can be stored in the refrigerator for up to 3 days.
- They can also be frozen for longer storage.
