Ingredients

  • 2 medium zucchinis, grated
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon Italian seasoning
  • Olive oil spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
  3. In a large bowl, combine the grated zucchini, Parmesan cheese, breadcrumbs, eggs, garlic, salt, pepper, and Italian seasoning.
  4. Mix until well combined.
  5. Form the mixture into small patties and place them on a baking sheet lined with parchment paper.
  6. Spray the tops of the fritters with olive oil spray.
  7. Bake for 20-25 minutes, flipping halfway through, until golden brown.
  8. Serve warm and enjoy!
