- 2 cups rolled oats
- 1/2 cup honey or maple syrup
- 1/2 cup almond milk
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped nuts (optional)
- 1/2 cup dried fruits (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, baking powder, and salt.
- In another bowl, combine the honey (or maple syrup), almond milk, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Add in the chopped nuts and dried fruits if using, and stir to incorporate.
- Spread the mixture evenly in a greased baking dish.
- Bake for 25-30 minutes or until the edges are golden brown.
- Allow to cool before cutting into bars.
