Ingredients

  • 2 chicken breasts (or thighs)
  • 1 cup mozzarella balls
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 4 cups baby spinach
  • 1/4 cup balsamic vinaigrette
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper. Drizzle with olive oil and place in a baking dish.
  3. Bake for 25-30 minutes until cooked through. Check at 25 minutes.
  4. Prepare the vinaigrette by whisking together balsamic vinegar, olive oil, salt, and pepper.
  5. Slice the cooked chicken into bite-sized pieces.
  6. Combine baby spinach, sliced chicken, mozzarella balls, diced avocado, and halved cherry tomatoes in a bowl.
  7. Drizzle the balsamic vinaigrette over the salad and toss gently.
  8. Serve immediately or refrigerate for meal prep.
