- 8 oz pasta of choice
- 1 block (8 oz) feta cheese
- 2 cups cherry tomatoes
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, feta cheese, minced garlic, olive oil, salt, black pepper, and red pepper flakes.
- Bake in the preheated oven for 30 minutes, or until the tomatoes are blistered and the feta is golden.
- While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente.
- Once baked, remove the dish from the oven and mash the feta and tomatoes together with a fork.
- Add the cooked pasta to the baking dish and mix until well combined.
- Garnish with fresh basil before serving.
Notes
- Feel free to use any type of pasta you prefer.
- For a creamier sauce, add a splash of pasta water when mixing.
