Ingredients

  • 8 oz pasta of choice
  • 1 block (8 oz) feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, feta cheese, minced garlic, olive oil, salt, black pepper, and red pepper flakes.
  3. Bake in the preheated oven for 30 minutes, or until the tomatoes are blistered and the feta is golden.
  4. While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente.
  5. Once baked, remove the dish from the oven and mash the feta and tomatoes together with a fork.
  6. Add the cooked pasta to the baking dish and mix until well combined.
  7. Garnish with fresh basil before serving.
