Ingredients

  • 1 ripe avocado
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Hard boil the eggs by placing them in a pot of water and bringing it to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
  2. Cool the eggs in ice water, then peel and slice them in half lengthwise.
  3. Remove the yolks and place them in a bowl. Add the avocado, mayonnaise, Dijon mustard, lime juice, salt, and pepper. Mash until smooth.
  4. Fill the egg whites with the avocado mixture using a spoon or piping bag.
  5. Garnish with chopped cilantro before serving.

Notes

  • For a spicier kick, add a dash of hot sauce to the avocado mixture.
