- 6 large eggs
- 1 ripe avocado
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon lime juice
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Hard boil the eggs by placing them in a pot of water and bringing it to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
- Cool the eggs in ice water, then peel and slice them in half lengthwise.
- Remove the yolks and place them in a bowl. Add the avocado, mayonnaise, Dijon mustard, lime juice, salt, and pepper. Mash until smooth.
- Fill the egg whites with the avocado mixture using a spoon or piping bag.
- Garnish with chopped cilantro before serving.
Notes
- For a spicier kick, add a dash of hot sauce to the avocado mixture.
- These can be made a few hours in advance; just cover and refrigerate until serving.
