A delicious and zesty chicken dish inspired by Applebee’s, featuring grilled chicken topped with a creamy lime sauce and served with rice and vegetables.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup of lime juice
- 1/2 cup of ranch dressing
- 1/2 cup of shredded cheese (Mexican blend)
- 1/4 cup of chopped cilantro
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- 1 cup of cooked rice
- 1 cup of mixed vegetables (like bell peppers and corn)
Instructions
- Marinate the chicken breasts in lime juice, ranch dressing, garlic powder, onion powder, salt, and pepper for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked.
- In the last few minutes of grilling, sprinkle shredded cheese on top of the chicken to melt.
- Serve the grilled chicken over a bed of cooked rice and mixed vegetables.
- Garnish with chopped cilantro and additional lime juice if desired.
Notes
- For a spicier version, add jalapeños to the marinade.
- Can substitute chicken with shrimp or tofu for a different protein option.
