Instructions

- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the diced apples.
- Divide the batter evenly among the cupcake liners.
- In a small bowl, mix the rolled oats, brown sugar, and melted butter to create the crumble topping.
- Sprinkle the crumble mixture over the top of each cupcake.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
- For added flavor, consider adding a pinch of nutmeg to the batter.
