Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar, divided
  • 2 (8 oz) packages cream cheese, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups apples, peeled and sliced
  • 1 tsp cinnamon
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a greased baking dish.
  3. In another bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs and vanilla, mixing until combined.
  4. Spread the cream cheese mixture over the crust.
  5. In a separate bowl, toss sliced apples with remaining sugar and cinnamon, then layer over the cheesecake mixture.
  6. In a bowl, combine oats, brown sugar, and flour. Sprinkle over the apples.
  7. Bake for 45-50 minutes or until the topping is golden brown.
  8. Allow to cool before slicing into bars.
