- ½ cup granulated sugar
- 1 ½ teaspoons baking powder

- 1 large egg
- ½ cup milk

- 1 cup chopped apples (about 1 medium apple)
- ½ cup all-purpose flour (for streusel)
- ¼ cup packed light brown sugar
- ¼ teaspoon ground cinnamon (for streusel)
- ¼ cup unsalted butter, cold and cut into small pieces
Instructions
- Preheat your oven to 375°F (190°C) and place paper liners in your muffin pan.
- Combine the dry ingredients in a large bowl: 1 ½ cups flour, ½ cup sugar, 1 ½ teaspoons baking powder, ½ teaspoon cinnamon, and ¼ teaspoon salt.
- Mix the wet ingredients in a medium bowl: 1 large egg, ½ cup milk, ¼ cup melted butter, and 1 teaspoon vanilla extract.
- Integrate the wet mixture into the dry ingredients, stirring gently until just combined.
- Fold in the chopped apples.
- Create the streusel topping by combining ½ cup flour, ¼ cup brown sugar, and ¼ teaspoon cinnamon, then cutting in the cold butter.
- Fill the muffin cups with batter and sprinkle the streusel on top.
- Bake for 18-22 minutes until a tester comes out clean.
- Cool for 5 minutes before transferring to a wire rack.
Notes
Make-ahead by preparing the batter the night before and store in the fridge. If in a hurry, use an air fryer and adjust cooking time to about 12-15 minutes.
