Description

Deliciously soft muffins filled with sweet apples and topped with a crunchy cinnamon streusel, perfect for fall mornings.


Ingredients

  • ½ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup milk

  • 1 teaspoon vanilla extract
  • 1 cup chopped apples (about 1 medium apple)
  • ½ cup all-purpose flour (for streusel)
  • ¼ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon (for streusel)
  • ¼ cup unsalted butter, cold and cut into small pieces

Instructions

  1. Preheat your oven to 375°F (190°C) and place paper liners in your muffin pan.
  2. Combine the dry ingredients in a large bowl: 1 ½ cups flour, ½ cup sugar, 1 ½ teaspoons baking powder, ½ teaspoon cinnamon, and ¼ teaspoon salt.
  3. Mix the wet ingredients in a medium bowl: 1 large egg, ½ cup milk, ¼ cup melted butter, and 1 teaspoon vanilla extract.
  4. Integrate the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Fold in the chopped apples.
  6. Create the streusel topping by combining ½ cup flour, ¼ cup brown sugar, and ¼ teaspoon cinnamon, then cutting in the cold butter.
  7. Fill the muffin cups with batter and sprinkle the streusel on top.
  8. Bake for 18-22 minutes until a tester comes out clean.
  9. Cool for 5 minutes before transferring to a wire rack.

Notes

Make-ahead by preparing the batter the night before and store in the fridge. If in a hurry, use an air fryer and adjust cooking time to about 12-15 minutes.
