- 2 lbs pork tenderloin
- 1 cup apple cider
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- 4 large sweet potatoes
- 4 tablespoons butter
- 1/2 cup milk
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Season the pork tenderloin with salt, pepper, and thyme, then add to the skillet, browning on all sides.
- Pour in the apple cider and bring to a simmer.
- Transfer the skillet to the oven and roast for 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- While the pork is cooking, peel and chop the sweet potatoes, then boil them in salted water until tender.
- Drain the sweet potatoes and mash them with butter and milk until smooth.
- Once the pork is done, let it rest for a few minutes before slicing.
- Serve the sliced pork with the mashed sweet potatoes on the side.
Notes
- For added flavor, marinate the pork in apple cider overnight.
- Feel free to add spices like cinnamon or nutmeg to the sweet potatoes for a twist.
- Leftovers can be stored in the refrigerator for up to 3 days.
