  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 4 large sweet potatoes
  • 4 tablespoons butter
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Season the pork tenderloin with salt, pepper, and thyme, then add to the skillet, browning on all sides.
  4. Pour in the apple cider and bring to a simmer.
  5. Transfer the skillet to the oven and roast for 25-30 minutes, or until the pork is cooked through.
  6. While the pork is cooking, peel and chop the sweet potatoes, then boil them in salted water until tender.
  7. Drain the sweet potatoes and mash them with butter and milk until smooth.
  8. Once the pork is done, let it rest for a few minutes before slicing.
  9. Serve the sliced pork with the mashed sweet potatoes on the side.
