- 2 cups cooked risotto
- 1 cup grated Pecorino Romano cheese
- 1/2 teaspoon freshly cracked black pepper
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- Cooking spray
Instructions
- In a bowl, mix the cooked risotto, Pecorino Romano cheese, and black pepper until well combined.
- Form the mixture into small balls, about the size of a golf ball.
- Set up a breading station with flour, beaten eggs, and breadcrumbs.
- Dredge each rice ball in flour, dip in eggs, and coat with breadcrumbs.
- Preheat the air fryer to 375°F (190°C).
- Place the arancini in the air fryer basket and spray lightly with cooking spray.
- Air fry for 10-12 minutes or until golden brown and crispy.
- Serve hot with a sprinkle of extra Pecorino Romano and black pepper.
Notes
- For a spicier kick, add crushed red pepper flakes to the risotto mixture.
